Gazette, The (Colorado Springs), Jul 27, 2010 by TERESA FARNEY
At the Fiddles, Vittles and Vino event at Rock Ledge Ranch Historic Site on Sunday, the most visual and, for me, the most delicious sampling was presented by Jason Gust, executive chef at the Doubletree Hotel World Arena. He had roasted a whole piglet and used the carcass as the serving vessel. The shredded barbacoa was delicious and the little pig with an apple in its mouth was a show- stopper.
I was pleasantly surprised to see Rachel Brown helping Gust serve the tasty treat. She has recently joined his kitchen crew at the Doubletree as his chef de cuisine.
